Ingredients

6 tomatoes halved
2 tsp olive oil plus a drizzle
1 red onion finely chopped
2 tsp pul biber
1 handful wild garlic or spinach
100 g stale bread of your choice
3 eggs
100 g feta
50 g halloumi

Steps

Heat the oven to 425 F and roast the halved tomatoes with 2 teaspoons olive oil for 25 minutes.
Cook the onion and peppers in an oven-safe 12-inch skillet over medium heat for 8 minutes.
Add the roasted tomatoes, pul biber, and greens, then cook for 5 minutes.
Tear the stale bread into the skillet and stir until coated with the tomato mixture.
Make three wells, crack in the eggs, and scatter the feta and halloumi over the skillet.
Bake at 400 F for 10 to 12 minutes until the eggs are firm, then drizzle with the remaining oil.
