Ingredients
- 1 tbsp extra virgin olive oil
- 1/2 red onion
- 3 cloves garlic
- 1 tbsp fresh thyme leaves
- 1 pinch ground nutmeg
- salt & pepper to taste (optional)
- 1 bunch dandelion greens
- 15 oz can cannellini beans
- 15 oz can red beans
- 2 tbsp balsamic vinegar
Steps
- Heat olive oil in a large skillet over medium heat for 1 minute.
- Cook the onion, garlic, thyme, and nutmeg for 5 minutes.
- Add the dandelion greens and cook for 5 minutes until wilted.
- Stir in both beans, salt, and pepper and simmer for 8 minutes.
- Stir in the balsamic vinegar and cook for 6 minutes.
