Ingredients
- 2 lb small red potatoes or 2 lbs small yellow potatoes
- salt
- 3/4 lb thick sliced bacon
- 1 1/2 cups diced red onions
- 4 green onions
- 3/4 cup dill pickle
- 3/4 cup good quality green olives
- 1 tbsp garlic powder
- 1 cup mayonnaise
- 1 tbsp dijon mustard
- 2 tsp habanero sauce
Steps
- Boil the potatoes in a large pot of salted water for 18 minutes, until fork-tender.
- Cook the bacon in a large skillet over medium heat for 8 minutes, until crisp, then drain and chop it.
- Drain the potatoes and let them cool for 5 minutes.
- Stir the mayonnaise, mustard, habanero sauce, garlic powder, salt, and pepper in a large bowl.
- Fold in the potatoes, bacon, red onions, green onions, pickles, and olives.
- Chill the salad for 10 minutes before serving.
