Ingredients
- 1 lb / 500g potato
- 2 1/2 tbsp oil
- 8 oz / 250g sausage
- 3/4 cup grated cheddar cheese
- 1/2 cup sliced scallions/shallots
- 1 egg
- 1/4 cup flour

Steps
- Shred the potato and squeeze it dry.
- Cook the sausage in a 12-inch skillet over medium heat for 6 minutes, breaking it up until it reaches 160 F, then transfer it out.
- Mix the potato, egg, flour, scallions, and pepper in a bowl.
- Heat the oil in the skillet over medium-high heat, then spread in the potato mixture and cooked sausage.
- Cook for 6 minutes until the bottom is crisp, then turn the mixture in sections.
- Cook for 5 minutes, sprinkle with cheddar, cover, and cook for 2 minutes until the cheese melts and the egg is firm.
