Ingredients
- 2 tbsp / 30g butter
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 1/2 tsp italian herb mix or other dried herbs
- 3/4 cup tomato paste
- 1/2 cup dry white wine (optional)
- 4 cups stock/broth
- 3 x 420g/15oz cans cannellini or any white beans
- 1/2 cup parmesan
- 1/2 tsp each salt and pepper
- 120 g /4oz baby spinach
- 3/4 cup cream (optional)
Steps
- Melt the butter in a large pot over medium heat, then cook the onion and carrot for 5 minutes.
- Add the garlic, herbs, and tomato paste, and stir for 2 minutes.
- Pour in the wine if using and cook for 1 minute, then add the broth and beans.
- Simmer uncovered for 10 minutes, mashing some beans against the pot to thicken the soup.
- Stir in the Parmesan, spinach, and cream if using, then cook for 3 minutes and season with salt and pepper.
