Ingredients
- 1/2 tbsp vegetable oil
- 1 shallot
- 2 clove garlic
- 1 2/3 cup canned whole peeled tomatoes
- 3 tbsp vegan red pesto
- 1/3 cup plain vegan cream cheese
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 1/2 lemon
- 5 1/2 cup vegan gnocchi
- 1/2 tbsp vegetable oil
Steps
- Heat the vegetable oil in a 12-inch skillet over medium heat.
- Cook the chopped shallot for 3 minutes, then add the garlic and cook for 1 minute.
- Stir in the tomatoes, red pesto, salt, and pepper, and simmer for 10 minutes.
- Bring a large pot of salted water to a boil and cook the gnocchi for 3 minutes, until tender.
- Drain the gnocchi and stir it into the tomato sauce with the vegan cream cheese.
- Add the lemon juice and cook for 2 minutes until the sauce is creamy.
