Ingredients
- 8 oz fresh green beans
- 1 red bell pepper
- 1/2 a large english seedless cucumber
- 2/3 cup shredded carrots
- 15 oz can chickpeas
- 1/2 cup avocado oil
- 1/4 cup red wine vinegar
- 2 1/2 tbsp chopped fresh basil
- 2 tbsp raw honey
- 1 tbsp fresh lime juice
- 1 pinch salt
Steps
- Trim the green beans, dice the bell pepper and cucumber, and place them in a large bowl.
- Add the carrots and drained chickpeas to the bowl.
- Whisk the avocado oil, vinegar, basil, honey, lime juice, and salt in a small bowl.
- Pour the dressing over the vegetables and toss for 3 minutes until well coated.
