Ingredients
- 1/2 cup almond butter
- 5 tbsp coconut sugar
- 1 tbsp coconut oil
- 1 egg yolk
- 1 tsp vanilla extract
- 1 egg
- 6 tbsp chocolate protein powder
- 1 tsp cornstarch
- 1 tsp cocoa powder
- 1 pinch salt
- 3 tbsp semi-sweet chocolate morsels
- 1/4 cup coconut flakes
Steps
- Beat almond butter, coconut sugar, and coconut oil in a bowl until smooth.
- Mix in the egg yolk, egg, and vanilla extract.
- Stir in protein powder, cornstarch, cocoa powder, and salt.
- Fold in the chocolate morsels and coconut flakes.
- Chill the dough for 30 minutes.
- Heat the oven to 350 F and place rounded spoonfuls on a lined baking sheet.
- Bake for 12 minutes, then cool the cookies for 18 minutes until firm.
