- 2 cups all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4 oz package sweetened shredded coconut-divided
- 3/4 cup unsalted butter
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup unsalted butter
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
Steps
- Heat the oven to 350 F and line two baking sheets.
- Whisk the flour, baking powder, salt, and half the coconut in a bowl.
- Beat the butter, sugars, egg, and vanilla, then stir in the flour mixture.
- Drop rounded spoonfuls onto the baking sheets, flatten them slightly, and bake for 10 to 12 minutes.
- Beat the remaining butter, powdered sugar, and vanilla until smooth while the cookies cool.
- Spread the filling on half the cookies, top with the remaining cookies, and press gently.
