Typical price: Salefork's estimate of an everyday US shelf price for each ingredient. Pick your city to price it from this week's ad.

The amounts listed are small for a full dinner, so this price per serving is likely low. Plan on a side or a bigger portion.

Ingredients

  • 2 large banana leaves
  • 1 3/4 oz achiote paste
  • 2 cups bitter orange juice or a mix of orange juice with white vinegar
  • 1/2 tsp ground black pepper
  • 3 lb boneless pork butt or pork shoulder cut into pieces 2-1/2 in cubes
  • 1 large red onion (optional)
  • 2 cloves garlic
  • 1 or 2 whole all spice berry
  • 1/4 tsp whole cumin
  • 1 tsp dried mexican oregano
  • 1/4 cup lard
  • salt to taste (optional)

Steps

  1. Blend the achiote paste, orange juice, vinegar if used, garlic, pepper, allspice, cumin, oregano, and salt.
  2. Toss the pork cubes with the marinade and let them stand for 15 minutes.
  3. Heat the oven to 325 F and line a covered 5-quart baking dish with the banana leaves.
  4. Add the pork, onion, and lard, fold the leaves over the meat, and cover the dish.
  5. Bake for 2 hours and 30 minutes, until the pork reaches at least 145 F and pulls apart easily.
  6. Rest the covered pork for 10 minutes before opening the leaves and serving.
