Ingredients
- 50 g almonds
- 2 large bramley apples
- 200 g candied peel
- 1 whole nutmeg
- 1 kg raisins
- 140 g plain flour
- 100 g breadcrumbs
- 100 g muscovado sugar
- 3 large eggs
- 2 tbsp brandy
- 250 g butter
Steps
- Grease a 1.5-quart heatproof bowl with butter.
- Mix the flour, breadcrumbs, sugar, raisins, candied peel, almonds, grated nutmeg, and chopped apples in a large bowl.
- Beat the eggs, brandy, and remaining melted butter together, then stir them into the fruit mixture.
- Spoon the batter into the bowl, cover it tightly, and place it in a deep pan with boiling water halfway up the sides.
- Cover the pan and steam the pudding over medium heat for 45 minutes, adding water as needed, until firm and the eggs are cooked.
