Ingredients
- 1 cup walnuts
- 1 1/2 tbsp maple syrup
- 8 cups arugula
- 2 cups cooked chicken breast
- 1 tbsp avocado oil
- 2 tbsp balsamic glaze
- 1 tsp salt
- 1/2 tsp black pepper
- 2 pears
- parmesan shavings (optional)
- 1 tsp lemon juice
Steps
- Toss the walnuts with the maple syrup in a small bowl.
- Slice the pears and place them in a large bowl with the arugula and chicken.
- Whisk the avocado oil, balsamic glaze, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss gently.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Scatter the maple-coated walnuts and optional Parmesan over the salad.
