Ingredients
- 1/2 cup creamy almond butter
- 1/2 cup unsalted butter
- 3/4 cup coconut sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 3/4 cup all purpose flour
- 1/2 cup old fashioned oats
- 3/4 tsp baking soda
- 1/2 tsp fine sea salt
- 1/2 cup dried cherries
- 2/3 cup chocolate chips or chunks
Steps
- Heat the oven to 350 F and coat a large baking sheet with cooking oil.
- Beat the almond butter, butter, and coconut sugar until smooth.
- Beat in the egg, vanilla, and almond extract.
- Stir in the flour, oats, baking soda, and salt.
- Fold in the dried cherries and chocolate chips, then drop 20 spoonfuls onto the baking sheet.
- Bake for 9 minutes until the edges are firm, then cool the cookies on the sheet.
