Ingredients
- 4 oz butter
- 1/2 cup yellow onion
- 3 cups corn
- 2 eggs
- 1 cup sour cream
- 2 tsp cumin
- 1/2 cup cornmeal
- 9 oz monterey jack cheese
- 1 can (14 oz) rotel tomatoes & chilies
- salt
Steps
- Heat the oven to 375 F.
- Melt the butter in a skillet over medium heat and cook the onion for 5 minutes.
- Whisk the eggs, sour cream, cumin, and salt in a large bowl.
- Stir in the cornmeal, corn, tomatoes and chilies, and cooked onion.
- Spread the mixture in a greased 9-inch square baking dish and top with the cheese.
- Bake for 20 minutes, until the center is set and the eggs are firm.
