Ingredients
- 2 small /medium ripe spaghetti squash
- salt and fresh pepper (optional)
- 4 thin chicken cutlets
- 1 pinch garlic powder
- 1/4 tsp oregano
- 2 cups quick marinara sauce
- 1 cup part skim shredded mozzarella
Steps
- Heat the oven to 400 F, halve the squash lengthwise, and remove the seeds.
- Rub the squash with cooking oil, season with salt and pepper, and place it cut-side down on a baking sheet.
- Roast for 45 to 50 minutes, until the squash strands separate easily with a fork.
- Season the chicken cutlets with garlic powder, oregano, salt, and pepper, then grill over medium-high heat until they reach 165 F.
- Scrape the squash strands lightly, fill the boats with marinara and sliced grilled chicken, and top with mozzarella.
- Bake the boats at 400 F for 10 minutes, until the cheese melts.
