Ingredients
- cooking spray or olive oil
- 4 cups cauliflower florets
- 1 egg
- 1/2 cup onion
- 1/3 cup shredded parmesan
- 1/3 cup shredded cheddar
- 1/4 cup finely ground breadcrumbs
- salt and ground fresh pepper to taste (optional)
Steps
- Heat the oven to 400 F and oil a baking sheet.
- Boil the cauliflower in a medium pot of water for 6 minutes, then drain well.
- Mash the cauliflower with the onion, egg, Parmesan, cheddar, breadcrumbs, salt, and pepper.
- Shape the mixture into small tots and place them on the baking sheet.
- Bake for 20 minutes, turning the tots halfway through.
