Ingredients
- 1 cup neutral flavored oil
- 2 cups white sugar
- 3 eggs
- 2 cups carrots
- 1 crushed pineapple
- 2 tsp vanilla
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 cup chopped pecans (optional)
- 1/2 cup butter
- 8 oz cream cheese
- 1 tsp vanilla
- 1 lb powdered sugar
Steps
- Heat the oven to 350 F, and grease a 9-by-13-inch baking pan.
- Whisk the oil, sugar, eggs, carrots, pineapple, and 2 teaspoons vanilla in a large bowl.
- Stir the flour, salt, baking soda, and cinnamon into the carrot mixture, then fold in the pecans.
- Spread the batter in the pan, and bake for 35 minutes, until the center is set.
- Beat the butter, cream cheese, 1 teaspoon vanilla, and powdered sugar until smooth.
- Cool the cake completely, then spread the frosting over the top.
