Ingredients
- 4 oz frozen spinach
- 5 oz firm tofu
- 1/2 tsp salt
- 2 tsp italian seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/4 cup or more vegan mozzarella
- 2 tbsp nutritional yeast
- 9 oz pasta sauce
- 1 tsp balsamic vinegar
- 15 ounce can butter beans
- vegan parmesan (optional)
- olive oil (optional)
Steps
- Heat the oven to 400 F and lightly oil a small baking dish.
- Thaw the spinach, squeeze out its water, and stir it with crumbled tofu, salt, Italian seasoning, onion powder, and garlic powder.
- Stir the balsamic vinegar into the pasta sauce.
- Layer the butter beans, sauce, spinach mixture, nutritional yeast, and vegan mozzarella in the baking dish.
- Bake for 20 minutes, until the sauce bubbles and the topping melts.
