Ingredients
- 3 large broccoli florets
- 1 leek
- 4 tbsp butter
- 1/4 cup all-purpose flour
- 2 cans (49 1/2 oz) low sodium chicken broth
- 1 cup milk
- 1 tbsp rosemary
- 1 tbsp dried oregano
- 2 tsp black pepper
- 1 tsp garlic powder

Steps
- Melt the butter in a large 8-quart pot over medium heat and cook the sliced leek for 5 minutes.
- Stir in the flour, rosemary, oregano, pepper, and garlic powder, then cook for 2 minutes.
- Gradually whisk in the chicken broth and add the broccoli.
- Simmer the soup for 25 minutes until the broccoli is very tender.
- Blend the soup until smooth, stir in the milk and cheddar cheese, and heat for 5 minutes without boiling.
