Ingredients
- 1 tbsp butter
- 1 yellow onion
- 3 large white potatoes
- 4 cups chicken broth
- 1/2 tsp kosher salt
- 6 cups broccoli florets
- 3 cups whole milk
- 3 cups shredded medium cheddar cheese
- 2 tbsp flour
- 1 tsp freshly ground black pepper
Steps
- Dice the onion and potatoes into small pieces.
- Melt the butter in a large pot over medium heat and cook the onion for 4 minutes.
- Stir in the flour and cook for 1 minute.
- Whisk in the chicken broth, then add the potatoes, salt, and pepper and simmer for 10 minutes.
- Add the broccoli and simmer for 6 minutes, until the vegetables are tender.
- Stir in the milk and cheddar, then cook for 3 to 4 minutes until the cheese melts.
