Ingredients
- 1 tbsp vegetable oil
- 1/2 cup white onion
- 2 epazote leaves (optional)
- salt to season
- 8 corn tortillas
- 1 cup vegetable oil for frying the tostadas (optional)
- 2 cups shredded lettuce
- 1 cup crumbled kroger queso fresco
- 1/2 cup mexican cream or sour cream
Steps
- Heat the vegetable oil in a skillet over medium heat and cook the onion for 4 minutes.
- Add the black beans, epazote, salt, and water, then simmer for 8 minutes and mash lightly.
- Heat the oven to 400 F and bake the tortillas on a baking sheet for 8 to 10 minutes until crisp.
- Spread the bean mixture over the crisp tortillas.
- Top each tostada with lettuce, queso fresco, and Mexican cream.
