- 2 cups organic white self raising flour
- 2 tsp baking powder
- 2 tbsp raw sugar
- 1/4 tsp salt
- 2 large eggs
- 2 1/2 tbsp coconut oil
- 1 tbsp pure vanilla extract
- 1 cup plain non-fat greek yogurt
- 1 cup unsweetened almond milk
- 1/3 cup fresh raspberries
- 1/3 cup fresh blueberries
- 1/4 cup dark/semi-sweet chocolate chips
Steps
- Whisk the flour, baking powder, sugar, and salt in a large bowl.
- Whisk the eggs, melted coconut oil, vanilla, yogurt, and almond milk in another bowl.
- Stir the wet mixture into the dry mixture until just combined.
- Fold in the raspberries, blueberries, and chocolate chips.
- Heat a lightly oiled skillet over medium heat and cook quarter-cup portions for 2 to 3 minutes per side.
