- 3 guajillo peppers
- 2 tbsp vegetable oil
- 1 lb ground beef
- salt to taste (optional)
- 1/4 tsp ground pepper
- 1/4 a medium-size white onion
- 2 small garlic cloves
- 1 cup potatoes
- 1 cup carrots
- 9 oz lard
- 3 1/2 cups masa harina for tortillas
- 3 cups chicken broth
- 20 corn husks
Steps

- Remove the stems and seeds from the ancho and guajillo peppers, simmer them in water for 10 minutes, and blend them with the garlic and onion.
- Heat the oil in a skillet, cook the ground beef for 8 minutes, then add the chile mixture, pepper, potatoes, and carrots.
- Simmer the filling for 12 minutes, until the beef reaches 160 F and the vegetables soften.
- Beat the lard until smooth, then mix in the masa harina, broth, and salt to make a spreadable dough.
- Spread masa on 20 husks, add filling, fold the husks, and arrange the tamales upright in a steamer.
- Steam covered for 40 minutes, until the masa pulls cleanly from the husks.
