- 1 cup chunky salsa
- 1 can (15 oz) black beans
- 4 soft flour tortillas
- 1 cup shredded mexican blend cheese
- 1/2 cup sour cream
- 1/4 cup sliced green onions
Steps
- Brown the ground beef in a large skillet over medium heat for 7 minutes, breaking it apart until it reaches 160 F.
- Stir in the taco seasoning, water, salsa, and black beans.
- Simmer the beef mixture over medium-low heat for 8 minutes, stirring occasionally.
- Tear the tortillas into pieces and stir them into the skillet for 3 minutes.
- Sprinkle on the cheese, cover the skillet, and cook for 2 minutes until melted.
- Top with sour cream and sliced green onions before serving.
