Ingredients
- 490 g all-purpose flour
- 5 1/2 +1/8 tsp baking powder
- 1 pinch salt
- 8 oz butter
- 320 g turbinado sugar
- 4 ea. eggs
- 950 g mashed banana
- 2 1/2 cups walnuts
- turbinado sugar for sprinkling (optional)
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with cooking oil.
- Whisk the flour, baking powder, and salt in a large bowl.
- Beat the butter and turbinado sugar, then mix in the eggs and mashed bananas.
- Stir the flour mixture into the banana mixture, then fold in the walnuts.
- Pour the batter into the pan and sprinkle the top with turbinado sugar if desired.
- Bake for 40 to 45 minutes until the center is firm and a tester comes out clean.
- Cool the loaf in the pan for 10 minutes before slicing.
