- 1/2 cup vegetable shortening
- 1 cup sugar
- 2 eggs
- 1 cup mashed ripe banana
- 1 tsp vanilla
- 1/2 cup sour cream
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups chopped nuts
- 1/2 cup sugar
- 1 tsp cinnamon
Steps
- Heat the oven to 350 F and grease an 8-inch square baking pan.
- Beat the shortening and 1 cup sugar until smooth, then beat in the eggs, banana, vanilla, and sour cream.
- Whisk the flour, baking powder, baking soda, and salt in a separate bowl.
- Stir the dry mixture into the banana mixture until just combined.
- Mix the nuts, remaining sugar, and cinnamon for the filling.
- Spread half the batter in the pan, add the filling, cover with the remaining batter, and bake for 35 minutes.
- Cool the cake in the pan for 10 minutes.
