Ingredients
- 1 cup all-purpose bleached flour
- 2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp nutmeg
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- vegetable oil for brushing griddle (optional)
- 2 small bananas
Steps
- Melt the butter in a small saucepan over low heat, then cool it for 5 minutes.
- Mash the bananas in a large bowl, then whisk in buttermilk, milk, egg, vanilla, and melted butter.
- Whisk flour, sugar, salt, baking powder, baking soda, and nutmeg in a second bowl.
- Stir the dry mixture into the banana mixture just until combined, then rest the batter for 10 minutes.
- Heat a lightly oiled griddle over medium heat and cook quarter-cup portions for 2 to 3 minutes per side, until firm and golden.
- Keep cooked pancakes warm in a 200 F oven until all the batter is used.
