- 1 1/2 cups milk
- 2 1/2 tbsp fresh lemon juice
- 1 1/3 cups mashed bananas
- 2/3 cup unsalted butter
- 1/2 cup brown sugar
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 8 oz cream cheese
- 1/3 cup butter
- 1 tsp fresh lemon juice
- 1 1/2 tsp lemon zest (optional)
- 3 1/4 cups powdered sugar
Steps
- Stir the milk and lemon juice together and let them stand for 5 minutes.
- Beat the butter, brown sugar, and granulated sugar until smooth, then add the eggs, vanilla, bananas, and milk mixture.
- Whisk the flour, baking soda, and salt in a separate bowl, then stir them into the banana mixture.
- Spread the batter in a greased 9-by-13-inch pan and bake at 350 F for 40 to 45 minutes.
- Beat the cream cheese, butter, lemon juice, lemon zest, and powdered sugar until smooth.
- Cool the cake completely, then spread the frosting over the top.
