Ingredients
- 4 chicken fillets
- 1/2 cup freshly grated mozzarella cheese
- 1/2 cup prepared basil pesto
- 1/2 tsp each salt
- 2 tbsp olive oil
- 1 tbsp pesto
- salt and pepper
- 1 lb green beans
- 1 pt cherry tomatoes
Steps
- Heat the oven to 400 F and lightly oil a 9-by-13-inch baking dish.
- Season the chicken with salt and pepper, then place it in the baking dish.
- Spread pesto over the chicken and sprinkle the mozzarella on top.
- Toss the green beans and tomatoes with olive oil, salt, and pepper, then arrange them around the chicken.
- Bake for 25 to 30 minutes, until the chicken reaches 165 F and the vegetables are tender.
