Ingredients

1 cup dried chickpeas
1/2 cup fresh parsley
1/2 cup fresh cilantro
1/4 cup onion
3 cloves garlic
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp cayenne pepper (optional)
1/2 tsp baking soda
1/2 tsp salt
2 tbsp olive oil (optional)

Steps

Boil the dried chickpeas in a medium saucepan for 2 minutes, remove from the heat, cover, and soak for 10 minutes.
Drain the chickpeas, cover them with fresh water, and simmer for 20 minutes until tender; drain well.
Blend the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne, baking soda, and salt into a coarse mixture.
Heat the oven to 425 F and oil a baking sheet with the olive oil.
Shape the mixture into 12 small balls, place them on the baking sheet, and flatten them slightly.
Bake for 12 to 15 minutes, turning once, until browned and firm.
