Ingredients
- 4 chicken breasts
- 1 tbsp lemon zest
- salt and pepper
- 12 stalks asparagus
- 4 slices mozzarella cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp extra virgin olive oil
Steps
- Heat the oven to 400 F and trim the asparagus stalks.
- Cut a pocket into the side of each chicken breast without slicing through it.
- Season the chicken with lemon zest, salt, pepper, garlic powder, and paprika.
- Fill each pocket with asparagus and mozzarella, then secure the openings with toothpicks if needed.
- Place the chicken in a greased 9-by-13-inch baking dish and brush it with olive oil.
- Bake for 25 to 30 minutes, until the thickest part reaches 165 F.
