- 1 clove garlic
- 1 heaping tablespoon shelled walnuts
- 2 oz arugula or baby arugula
- 1/4 tsp salt
- 2/7 cup extra virgin olive oil
- 1/5 cup freshly grated parmesan cheese plus extra for topping (optional)
- 9 1/2 oz refrigerated cheese tortellini
Steps
- Bring a large pot of salted water to a boil.
- Cook the refrigerated tortellini for 4 to 6 minutes, until tender.
- Blend the garlic, walnuts, arugula, salt, olive oil, and Parmesan until smooth.
- Drain the tortellini, reserving 1/4 cup cooking water.
- Toss the tortellini with the pesto, adding cooking water as needed, and top with extra Parmesan if desired.
