Ingredients
- 1/2 cup butter (optional)
- 1 cup white sugar
- 1 1/2 cups raisins
- 1 3/4 cups all-purpose flour
- 1/2 tsp ground cloves
- 1/2 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1/2 cup ground almonds
- 1 tsp baking soda
- 1 tbsp hot water
- 1 cup unsweetened applesauce
Steps
- Heat the oven to 350 F and grease a small cake pan with butter or cooking oil.
- Cream the butter and sugar in a bowl, if using butter.
- Stir in the applesauce, raisins, and hot water.
- Whisk the flour, cloves, allspice, cinnamon, ground almonds, and baking soda in another bowl.
- Fold the dry mixture into the applesauce mixture until just combined.
- Spread the batter in the pan and bake for 40 minutes, until firm in the center.
- Cool the cake for 5 minutes before cutting.
