Ingredients
- 1 cup bleached all-purpose flour
- 2 tsp granulated sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 egg
- 2 tbsp unsalted butter
- 1 tsp almond extract
- vegetable oil for brushing griddle (optional)
Steps
- Melt the butter in a small pan and cool it for 5 minutes.
- Whisk the flour, sugar, salt, baking powder, and baking soda in a large bowl.
- Whisk the buttermilk, milk, egg, melted butter, and almond extract in a second bowl.
- Stir the wet mixture into the dry mixture just until combined, then rest the batter for 10 minutes.
- Heat a lightly oiled griddle over medium heat for 5 minutes.
- Cook quarter-cup portions for 2 to 3 minutes per side, until golden and the egg is fully set.
