Ingredients
- 2 lb russet potatoes
- 1 tbsp + 3/4 teaspoon salt
- 2 tbsp distilled white vinegar
- 1 rib celery
- 2 tbsp minced red onion
- 3 tbsp sweet pickle relish
- 2/3 cup mayonnaise
- 3/4 tsp dry mustard
- 3/4 tsp celery seed
- 2 tbsp minced fresh parsley leaves
- 1/4 tsp freshly ground black pepper
- 2 large hard-boiled eggs (optional)
Steps
- Peel and cut the potatoes into one-inch pieces.
- Boil the potatoes in salted water for 12 to 15 minutes, until fork-tender.
- Drain the potatoes, toss them with vinegar, and cool them for 10 minutes.
- Stir the celery, onion, relish, mayonnaise, mustard, celery seed, parsley, pepper, and remaining salt in a large bowl.
- Fold in the potatoes and chopped eggs, if using, and chill for 5 minutes.
