- 8 boneless skinless chicken thighs
- 1 1/2 tbsp olive oil
- 2 tsp garlic powder
- 1 1/2 tsp chili powder
- 1 1/4 tsp salt
- 1 tsp ground cumin
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp paprika
- 3/4 tsp chipotle chili powder
- 1/3 cup honey
- 1 tbsp dijon mustard
- 1 tbsp yellow mustard
- 1 tbsp apple cider vinegar
- 1 tsp lemon juice
Steps
- Heat the oven to 425 F and arrange the chicken thighs in a 9-by-13-inch baking pan.
- Mix the olive oil, garlic powder, chili powders, salt, cumin, onion powder, and paprikas in a bowl.
- Coat the chicken with the spice mixture and roast for 16 minutes.
- Stir the honey, Dijon mustard, yellow mustard, apple cider vinegar, and lemon juice together.
- Brush the glaze over the chicken and roast for 4 to 6 minutes more, until it reaches 165 F.
