Ingredients
- 3 large sweet potatoes
- 1 tbsp brown sugar
- 1 tbsp butter
- 1 pinch cinnamon
- 1/4 tsp vanilla extract
- 1 pinch salt and pepper
- 1/2 cup miniature marshmallows
- 2 tbsp pecans
Steps
- Heat the oven to 400 F and place the sweet potatoes on a baking sheet.
- Pierce the potatoes with a fork and bake for 35 minutes, or until tender.
- Scoop the flesh into a bowl and mash it with brown sugar, butter, cinnamon, vanilla, salt, and pepper.
- Spread the mash in a greased 1-quart baking dish and top it with marshmallows and pecans.
- Bake at 400 F for 8 minutes, until the marshmallows are puffed and lightly browned.
