Ingredients
- 1 package (7 oz) zatarain's® spanish rice
- 1 1/2 cups water
- 1 can (14 1/2 oz) diced tomatoes
- 1 can (8 3/4 oz) whole kernel corn
- 1 can (4 1/2 oz) chopped green chilies
- 1 package (8 oz) corn muffin mix
- 1 1/2 tbsp finely chopped jalapeno pepper
- 1 cup shredded cheddar cheese
- 1/4 cup thinly sliced green onion
Steps
- Combine the rice mix, water, tomatoes, corn, and green chilies in a 12-inch oven-safe skillet.
- Bring the mixture to a boil, then cover and simmer for 20 minutes.
- Stir the corn muffin mix with water and cooking oil until just combined, then spread it over the rice.
- Sprinkle the cheddar cheese and jalapeno over the batter.
- Bake the skillet at 400 F for 15 minutes, then top it with sliced green onion.
