Ingredients
- 4 lb butternut squash
- 1 small yellow onion
- 2 honeycrisp apples
- 1 tbsp curry powder
- 4 cloves garlic
- 1/4 tsp cayenne pepper
- 2 tsp kosher salt
- 4 cups vegetable or chicken stock
- 1 can (13 1/2 oz) full-fat coconut milk
Steps
- Place the peeled squash, chopped onion, apples, garlic, curry powder, cayenne, salt, and stock in a slow cooker.
- Cover and cook on low for 4 hours, until the squash is very soft.
- Blend the soup in batches until smooth.
- Stir in the coconut milk and cook on high for 5 minutes.
