Ingredients
- 1 tbsp olive oil
- 1 lb andouille sausage
- 1 lb potato gnocchi
- 2 zucchini
- 1 red bell pepper
- grated parmesan
- basil for garnish (optional)
Steps
- Cut the sausage into slices, the zucchini and bell pepper into pieces, and the corn from the ears.
- Heat the olive oil in a large deep skillet over medium heat and cook the sausage for 5 minutes.
- Add the zucchini, corn, bell pepper, and gnocchi, then cook for 3 minutes.
- Pour in 1/2 cup water, cover the skillet, and simmer for 8 to 10 minutes, stirring once.
- Uncover and cook for 3 minutes, until the gnocchi is tender and the sausage reaches 160 F.
- Stir in the grated Parmesan and top with basil if desired.
