Ingredients
- 1 head garlic
- 1/4 cup olive oil
- 1 onion
- 4 potatoes
- 4 1/2 large tomatoes
- 5 cups chicken stock
- 3 packed cups chopped chard leaves
- pesto for garnish (optional)
Steps
- Heat the oven to 400 F and place the garlic on foil with 2 tablespoons olive oil.
- Wrap the garlic, roast it for 50 minutes, and let it cool slightly.
- Heat the remaining olive oil in a 6-quart pot, then cook the onion for 8 minutes.
- Add the potatoes, tomatoes, stock, and roasted garlic, then simmer covered for 50 minutes.
- Stir in the chard and cook uncovered for 10 minutes.
- Season with salt and pepper, then blend the soup until mostly smooth if desired.
