Ingredients
- 14 oz brussels sprouts
- 14 oz carrots
- 2 tbsp olive oil
- 4 tsp fresh thyme
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 2 tsp mustard
- 1/2 clove garlic (optional)
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp pepper
- crumbled cheese (optional)
Steps
- Heat the oven to 425 F and line a large baking sheet with the Brussels sprouts and carrots.
- Toss the vegetables with olive oil, thyme, salt, and pepper, then roast for 25 minutes, stirring halfway through.
- Melt the butter in a small saucepan over medium heat and whisk in the honey, balsamic vinegar, mustard, and garlic.
- Toss the roasted vegetables with the warm sauce and top with crumbled cheese, if using.
