Ingredients
- 4 1/2 large peaches
- 8 oz fresh raspberries
- 1/2 cup granulated sugar
- 1/4 cup tapioca or cornstarch
- 1 tbsp butter
- 1 tsp almond extract
- 3 refrigerated pie crusts
- 1 tbsp milk
- 1 tbsp cream
Steps
- Heat the oven to 400 F.
- Cook the peaches, raspberries, sugar, tapioca, butter, and almond extract in a medium saucepan for 8 minutes.
- Cool the fruit mixture for 10 minutes while cutting the pie crusts into rounds.
- Place filling on half the rounds, cover with the remaining rounds, and press the edges closed.
- Brush the pies with the milk and cream mixture, then cut a small slit in each top.
- Bake on a large baking sheet for 25 minutes, until the crusts are golden.
