Ingredients
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 4 tbsp butter
- 2/3 cup sugar
- 1/2 tsp pure vanilla extract
- 1/2 tsp almond extract
- 1/2 tsp lemon zest
- 1 large egg
- 1/2 cup buttermilk
- 1 cup fresh raspberry
- 1 1/2 tbsp sugar
- 1/4 cup sliced almonds
Steps
- Heat the oven to 350 F and grease an 8-inch round cake pan.
- Whisk flour, baking powder, baking soda, and salt in a bowl.
- Beat butter and 2/3 cup sugar until light, then beat in the egg, vanilla, almond extract, and lemon zest.
- Stir in the flour mixture and buttermilk until just combined, then spread the batter in the pan.
- Toss raspberries with 1 1/2 tablespoons sugar, scatter them over the batter, and top with almonds.
- Bake for 20 to 25 minutes until the center is set and the cake reaches 160 F.
