Ingredients
- 2 lb boneless skinless chicken breasts
- 1 packet taco seasoning
- 2 tbsp olive oil
- 1 lime
- 1/2 cup diced fresh tomatoes
- 1/2 cup diced onion
- 1/4 cup chopped fresh cilantro
- salt (optional)
- 12 flour tortillas
- 2 oz cotija cheese (optional)
Steps
- Coat the chicken with olive oil and taco seasoning, then let it stand for 5 minutes.
- Cook the chicken in a large skillet over medium heat for 18 minutes, turning once, until it reaches 165 F.
- Rest the chicken for 4 minutes, then chop it and toss it with lime juice.
- Warm the flour tortillas in a dry skillet for 4 minutes.
- Fill the tortillas with chicken, tomatoes, onion, cilantro, and cotija cheese within 4 minutes.
