Ingredients
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp fine sea salt
- 3 large eggs
- 1 cup oil
- 15 oz pumpkin puree
- 8 oz cream cheese
- 8 tbsp unsalted butter butter
- 1 cup powdered sugar
- 2 tsp vanilla extract
- pecans to decorate (optional)
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan.
- Whisk the flour, sugar, baking soda, baking powder, cinnamon, and salt in a large bowl.
- Whisk the eggs, oil, and pumpkin in another bowl, then stir them into the dry mixture.
- Spread the batter in the pan and bake for 30 to 35 minutes, until a toothpick comes out clean.
- Cool the cake completely in the pan.
- Beat the cream cheese, butter, vanilla, and powdered sugar until smooth, then spread the frosting over the cake.
