Ingredients
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2/3 cup pumpkin puree
- 1 egg yolk
- 2 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 1 1/2 tsp pumpkin pie spice
- 3/4 tsp salt
- 1/4 tsp baking powder
- 2 tbsp granulated sugar
- 3/4 tsp cinnamon
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan.
- Melt the butter and stir in both sugars, pumpkin, egg yolk, and vanilla.
- Whisk the flour, pumpkin pie spice, salt, and baking powder in a separate bowl.
- Stir the dry mixture into the pumpkin mixture until just combined.
- Spread the batter in the pan and sprinkle it with the remaining sugar and cinnamon.
- Bake for 22 to 25 minutes, until the center is firm and a toothpick comes out with moist crumbs.
- Cool the blondies in the pan before cutting them into squares.
