Ingredients
- 1 1/2 cups shortbread cookies
- 1 2/3 cups coconut
- 1/3 cup melted butter
- 1 large banana
- 1 1/2 cups cold milk
- 1 package (4 oz) instant vanilla pudding
- 1 can (8 oz) crushed pineapple
- 2 cups cool whip
Steps
- Crush the cookies and mix them with one cup coconut and the melted butter.
- Press the mixture firmly across the bottom and sides of a nine-inch pie pan.
- Slice the banana and arrange it over the crust.
- Whisk the cold milk and pudding mix in a bowl for two minutes, then fold in the pineapple and one cup coconut.
- Spread the pudding mixture over the banana and top with the whipped topping.
- Chill the pie for 15 minutes before slicing.
