Ingredients

4 1/2 potatoes
1 lb fresh mushrooms
1 cup half and half
2 large carrots
1/2 cup chopped green onion
6 cups chicken broth
1/4 cup all-purpose flour
3 tbsp unsalted butter
2 tbsp olive oil
2 tsp chopped dill (optional)
1 bay leaf
1 tsp salt (optional)
1/8 tsp ground black pepper

Steps

Melt the butter with the olive oil in a large pot over medium heat.
Whisk in the flour and cook for 1 minute.
Slowly whisk in the chicken broth, then add the potatoes, carrots, mushrooms, bay leaf, salt, and pepper.
Bring the soup to a boil, then simmer for 18 minutes until the potatoes are tender.
