- 1 lb ground beef
- 1 package (1 oz) taco seasoning
- 12 fajita size tortillas
- 1 can (16 oz) refried beans
- 1 can (10 oz) red enchilada sauce
- 1/2 cup diced tomatoes
- 1 1/2 cups mexican shredded cheese
- 1/4 cup sliced olives
- 1/4 cup taco sauce
- sliced green onions
Steps
- Heat the oven to 400 F and place six pairs of tortillas on two baking sheets.
- Cook the ground beef and taco seasoning in a large skillet over medium heat for 8 to 10 minutes, until it reaches 160 F.
- Spread refried beans over six tortillas, then top with the cooked beef and a second tortilla.
- Spread enchilada sauce over each top tortilla and sprinkle on the cheese, tomatoes, olives, taco sauce, and green onions.
- Bake for 10 to 12 minutes, until the tortilla edges are crisp and the cheese melts.
